While sushi continues to boom across the U.S. and western world, the green lump served on the side isn’t actually wasabi — it is an imitation made from horseradish, food dyes, and chemicals. The true and amazing flavors of real wasabi have been enjoyed for over a millennium, but is almost impossible to find today.
Why…? Because of the wasabi crisis! Recent climate change and an aging farming population have wiped out over 70% of its production, causing this storied flavor to disappear. At Cai Foods, we carry forward the generational knowledge of our partner wasabi farmers in Japan to make real wasabi available to all.
